Wowee What an amazing summer so far. It reminds me of the 1977 heatwave when I was young and spent long summer evenings jumping through the garden sprinkler with my brothers. I find myself, several years older running a business delivering gas bottles and products to lovely people all over the local area. I was a diehard charcoal barbecue fan from my childhood. I can still see my Dad fanning the coals with a newspaper to produce, burnt on the outside, raw on the inside sausages. I brought my first gas barbecue 5 years ago, I felt like such a traitor. But I now love it. I can finish work on a beautiful summers evening, step outside and light up, instantly. Marinated chicken that took me 5 minutes in the morning, Jersey royals on the side smothered in butter, plus salad. I am a veritable Nigella I tell you. So my friends I bring to you below one of my favourite quick recipes, to make you Nigella too.

Ingredients:
675g/1½lb lean bavette or flat-iron steaks
For the Spiced Marinade:
4 garlic cloves, peeled and finely chopped
1 red chilli, deseeded and finely chopped
Juice of 1 orange
Juice of 1 lemon
30ml/2tbsp freshly chopped flat-leaf parsley
45ml/3tbsp olive oil
Salt and freshly milled black pepper
For the Herb Salsa:
2 spring onions, finely chopped
15ml/1tbsp white wine vinegar
Pinch of dried chilli flakes
30ml/2tbsp freshly chopped coriander (leaves and stalks)
30ml/2tbsp freshly chopped flat-leaf parsley
Juice of ½ lime
45ml/3tbsp olive oil
Salt and freshly milled black pepper
